CIEH Level 2 Award in Food Safety

Who will benefit?
This course has been re-designed in order to be more relevant to specific business environments and is suitable for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.
Learning outcomes
Successful completion of the training programme and assessment will enable candidates to understand:
- The terminology used in food safety
- The laws that apply to food businesses and food handlers
- The concepts of food hazards and how the risk of food poisoning can be contained
- How to take product temperatures
- How a reduction in storage temperature will minimize bacterial multiplication
- The importance of high temperatures in the supply of safe food
- The role of heat processing in the production of safe food (manufacturing syllabus only)
- That food handlers can pose a risk to food safety
- The importance of cleaning in food premises
- The need for high standards for structure and equipment to promote good hygiene in food premises
Entry Qualifications and Progression
There are no entry qualifications for this course. Following this course you might wish to consider the CIEH Level 3 Award in HACCP or perhaps the CIEH Level 3 Award in Supervising Food Safety.
Assessment
There is a short multi-choice test at the end of the course. Candidates are required to correctly answer 20 out of 30 questions in order to achieve a Chartered Institute of Environmental Health Level 2 Award in Food Safety in Catering, Retail or Manufacturing. Test papers and course books are available in several different languages and tests can also be conducted orally. QCA Accredited.

Venue
Courses may be held in house at your premises. We appreciate that it is sometimes difficult to release staff on training courses; therefore we offer the flexibility to hold the course either as a one-day course, two half-day courses or even at a weekend, to suit your business requirements. We also regularly run public courses at our training centres.
